Step 1
Mix 20 of all-purpose flour with water to form a slightly soft dough. Make a very small ball, seal it, and let it rest for ten minutes. Roll it out thinly; for extra crispiness, roll it into a very thin sheet—very thin indeed! You can make several slits in the middle.

- 02
Step 2
Use more oil than you would for stir-frying, heat it to about 50% of its maximum temperature, add the crispy fried dough pieces, and fry until golden brown on both sides.

- 03
Step 3
Remove from the water, drain off excess oil, and let it air dry; it will still be very crispy.

- 04
Step 4
Mix wheat flour, corn flour, and a pinch of salt with water to form a thin batter.

- 05
Step 5
It flows very easily.

Step 6
Brush a thin layer of oil in a non-stick pan. The pan doesn't need to be hot, just warm. Pour in the batter, holding the pan handle and swirling it around to spread the batter evenly across the bottom. Heat to about 7 % (medium-high heat), and once the surface has solidified, pour in the egg mixture. Use a spatula to coat the entire surface of the pancake. Sprinkle with sesame seeds and chopped green onions. Wait a few minutes until the egg mixture has set, then flip it over gently as the pancake is very thin.

Step 7
Spread on the sweet and sour sauce, then add crispy fried dough sticks, ham, pork floss, and pre-washed lettuce. You can also add sliced meat. If you prefer a sweeter taste, add less sauce and more salad dressing.

- 08
Step 8
Roll it up and take it out of the pot.
