Step 1
Prepare the dumpling filling ingredients. Season the pre-ground pork with light soy sauce, oyster sauce, salt, and five-spice powder. Soak the dried shrimp in water beforehand.

- 02
Step 2
Chop all ingredients as finely as possible, then combine them. I made two combinations: ① Vegetable and mushroom filling: vegetable, mushrooms, a small amount of scallions, and a little carrot for color; ② Shrimp and carrot filling: carrot, shrimp, and scallions.

- 03
Step 3
Place the two fillings in separate bowls, then add the pre-seasoned ground meat. To prepare the dumpling filling: salt, light soy sauce, oyster sauce, and a little pork (if you don't like lard, you can add a little sesame oil or cooked oil).

Step 4
Mix well

Step 5
Cover with a plastic bag and refrigerate briefly to allow the meat to absorb the flavors and to prevent it from falling apart when wrapping.

- 06
Step 6
Make dumplings using various wrapping methods (I managed to buy some colored dumpling wrappers). Make a lot and freeze them; just boil them when you want to eat them.

- 07
Step 7
To boil dumplings, boil a pot of water, add a little salt to the boiling water to prevent them from sticking to the pot, and then boil the dumplings.

- 08
Step 8
Once cooked, those who prefer dry dumplings can simply enjoy them with their favorite dipping sauce.

- 09
Step 9
For the soup dumpling sauce: salt, light soy sauce, vinegar, chili oil, and a sprinkle of sesame seeds and chopped green onions.

Step 10
Pan-fried dumplings: Preheat the bottom plate of an electric griddle with oil, place the dumplings in, and once the bottoms of the dumplings are set, add a small amount of warm water, cover the griddle, and wait for the water to completely evaporate. Then, beat an egg, add a little salt and some chopped green onions. Pour the egg into the gaps between the dumplings, and once the egg is cooked, plate the dumplings whole.
