Chive, pork, vermicelli, and egg dumplings
How to make chive, pork, glass noodle, and egg dumplings (with pictures and 8 steps). Wash the chives thoroughly and let them dry (wet chives will easily rot).

Method
- 01
Step 1
Wash the chives thoroughly and let them dry (wet chives rot easily).

- 02
Step 2
Mince the pork, fry four eggs in oil until they become egg pieces, chop them up and mix them into the minced pork.

- 03
Step 3
Soak the glass noodles until soft, then chop them and mix them with the minced meat. It's best to use the translucent, soft type of glass noodles for a better texture, but I didn't have any, so I just used whatever I had.

- 04
Step 4
Chop the scallions and ginger. This is up to personal taste. I don't like them, but the flavor will be a bit off if I don't add them, so I add a small amount.

- 05
Step 5
Chop the chives and add them in, then mix well.

- 06
Step 6
Add seasonings as needed, according to personal taste.

- 07
Step 7
Adding two eggs and stirring will make the dumpling filling more cohesive and less likely to fall apart. The dumpling filling is now ready!

- 08
Step 8
In the end, I bought pre-made dumpling wrappers, wrapped them up, put them in the refrigerator, and a delicious batch of chive, pork, vermicelli, and egg dumplings was ready!
