Bring water to a boil in a pot, add a few drops of oil, and blanch the snow peas for about 30 seconds. Remove them, rinse with cold water, and drain. Blanching makes them easier to cook and gives them a brighter color.

Heat oil in a pan until it reaches about 50% of its maximum temperature. Then reduce the heat to low and add minced garlic. Sauté until fragrant, being careful not to burn the garlic.

Turn the heat to high, add the snow peas and stir-fry quickly for 1-2 minutes until just cooked. Season with salt, and you can add a little oyster sauce or chicken bouillon for extra flavor (optional if you prefer a milder taste).
