Cut the pork shoulder you bought into small, thick slices.
Add white pepper powder, light soy sauce, oyster sauce, ginger and scallion water (or cooking wine), an egg, and a spoonful of cornstarch to the chopped meat. Mix well and marinate for 30 minutes.
Mix cornstarch and sweet potato starch in a 1:1 ratio, and coat both sides of the marinated meat evenly with starch before cooking.
Shake it a bit and then fry it in oil until one side is golden brown and crispy. Then fry the other side until the crust is very crispy. Remove it from the oil.
Add a little more oil to the pan, sautΓ© the ginger slices and white parts of the scallions until fragrant, then add the green parts of the scallions and sautΓ© for a few seconds until fragrant.
Set up a large plate
Pour in the sauce, cover and simmer over medium heat for about 10 minutes.
Before removing from heat, reduce the sauce over high heat until thickened; you can add more scallions.
