Peel the winter melon, remove the seeds and pulp, and cut it into slightly larger pieces.

Heat oil in a wok, add chopped scallion whites and minced garlic, and stir-fry until fragrant.

Add the winter melon back in and stir-fry for about a minute until it changes color.

Add half a teaspoon of salt, a white teaspoon of sugar, two tablespoons of light soy sauce, and one tablespoon of oyster sauce to taste.

Stir-fry until the color develops, then add water.

Bring to a boil over high heat, then reduce to a simmer and cook for 15 minutes.

Sprinkle with chopped green onions and it's ready to serve!
