Some people like to slice carrots, while others prefer to shred them. I think shredded carrots absorb the flavor better and have a better texture.

Heat oil in a wok again, then add the fatty pork and render some of the fat. I rendered a bit too much oil here 😅, so don't make too much at home. But then again, this dish tastes better with more oil!
