Heat a pan with a little vegetable oil, then add the fatty pork and stir-fry to render the fat. I used pork shoulder here, separating the lean and fatty parts, so the fat can be used to render oil during stir-frying.

Add the cleaned cauliflower, pour a spoonful of water along the edge of the pot, and quickly cover with the lid. 🤔 Cauliflower has a relatively high pesticide residue, so it's recommended to soak it in water with a little baking soda for 10 minutes, then rinse it clean and set aside. If you don't mind the extra step, you can blanch it before stir-frying, but I stir-fried it directly here to make a one-pot dish.

Cover the pot and simmer over high heat for 1 minute (until just cooked through). After uncovering, stir-fry for another 10 seconds and set aside.

Heat oil in a wok again, add the lean meat and stir-fry until cooked through.

Add the chopped chili peppers and minced garlic, and stir-fry until fragrant.

Next, add 2 grams of salt, a suitable amount of light soy sauce, and 2 grams of chicken essence. Stir-fry over high heat for 10 seconds and it's ready to serve!
