Steps to make Hunan-style spicy stir-fried pork ribs, a dish that's perfect with rice

Wash the pork ribs and chili peppers. After washing and drying the chili peppers, remove the stems and crush them.

Heat a pan with cold oil until it reaches 40% heat, then add the ribs and fry over low heat until the fat is rendered.

Add star anise and cinnamon and continue stir-frying.

Add beer, salt, and water, simmer over low heat for 10 minutes, then add light soy sauce. Remove from heat and set aside, including the broth.

Add the chili peppers to a clean pot, slowly crush them to remove the water, then remove and set aside.

Heat a wok with cold lard, then add chili peppers and salt and stir well.

Add garlic and fermented black beans, stir-fry until fragrant, then add oyster sauce and stir well.

Stir-fry the ribs until fragrant and remove from heat.
