Homemade Sweet and Sour Pork Ribs Recipe Steps

Rinse the pork ribs and blanch them in cold water.

After blanching and removing the blood foam, remove the fish and wash it with warm water.

In a separate pot, fill it with water and turn on the heat. Place the cleaned pork ribs into the boiling water, add scallions, ginger slices, star anise, and cinnamon, and simmer over medium heat for about 40 minutes. At this point, the ribs should not be too tender.

Prepare a sauce while cooking the ribs: 1 tablespoon dark soy sauce, 2 tablespoons light soy sauce

4 tablespoons of white sugar

5 tablespoons of white vinegar

Take a rice bowl, half a bowl of water, stir well and set aside.

Cut a little ginger into thin strips.

Remove the cooked ribs and drain them.

In a cold pan with cold oil, add rock sugar to caramelize it.

Cook over low heat until the sugar caramelizes to a deep amber color, then turn off the heat.

Add the ribs and stir-fry (turn off the heat before stir-frying to prevent splattering onto your face).

Turn up the heat and stir-fry until the color deepens.

If you added star anise and cinnamon when cooking the ribs, you don't need to add them now.

Add shredded ginger and stir-fry until fragrant.

Pour in the sauce, then add a little water to rinse the bowl clean, so nothing goes to waste 😁

First bring to a boil over high heat, then reduce to low heat, cover, and simmer for about 10-15 minutes, turning the food over halfway through.

Remove the lid and reduce the sauce over high heat, stirring constantly. Do not leave it unattended during this process, as it can easily burn.

When it starts to bubble vigorously and becomes slightly viscous, turn the heat to low.

Pour two spoonfuls of vinegar along the edge of the pot.

Stir-fry briefly and remove from heat immediately.
