You'll need about 20 chicken feet (about 2 pounds). Choose the broiler chicken feet, as they're easier to get the tiger-skin pattern on. First, trim the tips of the chicken feet with scissors for a nicer look. Then, put them in a pot of cold water with scallions, ginger, and white vinegar (or cooking wine or Shaoxing wine). After it boils, skim off the foam and discard it. Boil for about 2 more minutes, then remove them from the water. Don't rinse them with cold water; let them air dry first. You can use a hairdryer to dry them.

After air-drying or blow-drying the chicken feet, add 2 tablespoons of dark soy sauce for color, making sure to coat them evenly. Heat a pan with cold oil until it reaches about 60% of its maximum temperature. Test the oil temperature with a scallion; if it bubbles, it's ready to add the chicken feet. Be extremely careful! Hold a lid in your hand. Immediately cover the pan with the lid when you add the chicken feet. Do not lift the lid if you hear a crackling sound.

Once the sizzling sound of oil stops, remove the lid and use a slotted spoon to scoop out the chicken feet. Prepare a bowl of ice water and soak the chicken feet in it for 1-2 hours (sometimes as short as half an hour, depending on the situation). Then remove them and set aside.

Scoop up the chicken feet

Then prepare a strainer with a bowl underneath, pour out the seasoning residue and discard it.

Then heat oil in a wok, add minced garlic, chopped chili peppers, and the tiger-skin chicken feet, and turn the heat back up.

Reduce the sauce

It's almost ready to be taken out of the pot.
