
I usually don't order vegetarian dishes when I eat out, but this is a dish that I find very appetizing even without meat.

Drain the eggplants that were previously soaked in salt water and set aside.

In a separate pan, add plenty of cooking oil and heat to 180 degrees Celsius before frying the eggplant.

Fry the eggplant until golden brown.

1. I used round eggplants, so one was enough. If using long eggplants, you might need 3-5. 2. Adding bell peppers is also delicious; the method is similar to the tomato recipe. 3. If you don't have celery, you can use cilantro instead. 4. While cooking, I found some mushrooms at home, so I chopped some and added them to the tomato soup, increasing the simmering time by 10 minutes.
