Remove the shells from the shrimp, devein them, wash them thoroughly, and set aside.

Prepare the garlic sprouts by washing them thoroughly, then split them open with a fork and cut them into sections. Set aside.

Add 2-3 times the amount of oil you would normally use for stir-frying to the wok, then add the garlic sprouts.

Stir-fry until some of the garlic sprouts turn golden brown and most of them soften.

Add the shrimp and stir-fry briefly. When the shrimp start to turn red, add a spoonful of salt and two spoonfuls of sugar.

Stir-fry a few more times until the shrimp turn completely red, then cover and simmer for about ten seconds! [Ten seconds!!! Not ten minutes!!!] After simmering, the shrimp will be flavorful, and the salt and sugar will have dissolved. Uncover and stir-fry for another ten or so times.
