Home-style dish: Stir-fried chicken giblets recipe steps

Clean the chicken giblets and hearts, slice them, and cut the chicken intestines into sections. Soak them together in beer for about 10-15 minutes. Soaking the chicken giblets in beer can remove the fishy smell! ⚠️The chicken giblets and hearts are cut raw. Wash the chicken intestines twice with flour and salt, then blanch them in boiling water for about 20 seconds.

Prepare the side dishes as well. I have both pickled and fresh chili peppers. Use whichever type of chili pepper you like, and adjust the amount according to your spice tolerance. You can also use other side dishes such as pickled green beans, pickled radishes, garlic sprouts, or other side dishes you like. There's no set amount for scallions, ginger, and garlic; add more if you like and omit if you don't!

Prepare rice wine or yellow wine; you can also use white wine if you like! Prepare the seasonings in advance, as you'll be stir-frying quickly later to avoid adding them one by one, which is too slow. I used one spoonful each of oyster sauce, soy sauce, soybean paste, and chili sauce! There are no standard rules for home cooking; use whatever seasonings you like! ⚠️The saltiness of various sauces varies, so it's better to use less rather than more!

Drain the chicken giblets that have been soaked in beer, squeeze out the excess water, add a spoonful of light soy sauce, a pinch of white pepper, and a pinch of salt, mix well and set aside.

Heat a wok until it smokes, add oil to coat the wok, then add the chicken giblets over high heat and stir-fry quickly for no more than 30 seconds! Turn off the heat and remove the chicken giblets.

After removing the chicken giblets, do not discard the broth in the pot; rinse the pot clean.

The chicken giblets are still very tender at this point. Many people like to blanch them, but I don't recommend it because if you don't control the blanching process well, the giblets will easily become tough!

Reheat the wok until it smokes, add oil, and stir-fry over high heat. First, add ginger and garlic, then add chili peppers or other side dishes and stir-fry quickly until fragrant.

Add the chicken giblets, followed immediately by the prepared seasonings. Stir-fry quickly over high heat for no more than one minute! Remove from heat! High-heat stir-frying is key to tender chicken giblets! ⚠️ Add chicken bouillon and MSG as needed.

Some people like more oil when stir-frying for a richer flavor, while others prefer less oil for a healthier option. It's all fine, just do what you like!
