First, cut it into slices about one centimeter thick, then cut it into strips.

Finally, cut it into cubes, then bring water to a boil over high heat.

Blanch the diced potatoes for one minute, then drain and remove.

Make sure to drain the water completely before adding cornstarch.

Shake the bowl to ensure each potato piece is evenly coated with cornstarch. Heat oil in a wok over high heat until it reaches 60% of its maximum temperature. Add the potatoes and fry over medium-low heat.
