
A simple and quick home-style dish can be made with a whole chicken or just chicken legs.

Wash the chicken, cut it into pieces, and drain. Heat oil in a pan, add the chicken pieces and ginger slices, and stir-fry together.

Stir-fry until the chicken skin starts to brown, then add spices and stir-fry for a while. ⚠️Use whatever spices you have at home; I used star anise, cinnamon, Sichuan peppercorns, cardamom, angelica root, and dried chili peppers.

Add fermented soybean paste and chili powder and stir-fry for a while longer.

Season with salt, sugar, oyster sauce, and soy sauce.

After stir-frying, turn off the heat and transfer the chicken to a pressure cooker. Add half a bowl of boiling water. The cooking time depends on the age of the chicken and your preferred texture. My pressure cooker has high pressure; after it starts releasing steam, cook for 2.5 minutes and then immediately remove from the cooker.

Release the pressure cooker, open the lid, add chili peppers and scallions, bring to a boil, and then plate! ⚠️If you like it extra numbing, remember to add a spoonful of Sichuan peppercorn oil at this point!
