Steps for making salt-baked shredded chicken

500g of chicken pieces, 6 slices of ginger and 6 sections of scallion.

Put the chicken pieces into a pot of cold water.

Add ginger slices, scallion segments, and 2 tablespoons of cooking wine.

Bring the water to a boil over high heat and skim off any foam that rises to the surface.

Cover and simmer over low heat for 5 minutes. Then turn off the heat and let it sit for 30 minutes.

Then you can take the chicken pieces out and let them cool.

Tear the chicken pieces into smaller pieces.

Add 20g of salt-baked chicken powder, 3 tablespoons of chopped green onions, and 2 tablespoons of sesame oil. (If you have toasted sesame seeds, you can add 1 tablespoon for extra flavor.)

Mix well.
