
I love using garlic to braise snakehead fish, ribbonfish, and small yellow croaker. Besides the delicious flavor of the fish, the garlic is also incredibly tender and delicious, melting in your mouth 😋

Steps for making braised small yellow croaker with garlic

Scale and gut the small yellow croaker, clean it thoroughly, wash it, and dry it with kitchen paper towels.

Prepare 1 head of garlic, 4 slices of ginger, chopped scallions (for sautéing), sliced scallions (for garnish), and shredded 1/3 of a red bell pepper.

Pan-fry the small yellow croaker in a non-stick pan for about 2 minutes on one side and about 4 minutes on both sides. After frying, add 1 tablespoon of cooking wine to the side of the pan.

Move the fish to one side and sauté the scallions, ginger, and garlic until fragrant.

Add 2 tablespoons of light soy sauce and 2 tablespoons of dark soy sauce.

Add boiling water, sprinkle with white pepper powder, add 1/2 tablespoon of white sugar, bring to a boil, then simmer over medium-low heat for 20 minutes.

Before removing from heat, add red bell peppers and scallion slices, simmer for 5 minutes, then uncover and reduce the sauce over high heat.

The finished product is ready.
