
Stir-fry a mixed vegetable dish, using whatever you have on hand. Wood ear mushrooms, yam, carrots, green beans, and various other vegetables are mixed together in one dish. If you like meat, add some sliced ββmeat and stir-fry together.

Soak dried wood ear mushrooms until softened, rub them with flour, and cut into wide strips; peel and thinly slice Chinese yam; peel and thinly slice carrots; wash green beans thoroughly under running water. Soak green beans in a solution of baking soda for 20 minutes to remove pesticide residue. Rinse thoroughly under running water and drain. Cut into diagonal sections. Slice or crush half a head of garlic.

Use fresh beef, choosing cuts such as brisket, marbled beef, or tenderloin, and slice thinly against the grain. Add 1 tablespoon of light soy sauce, 1 tablespoon of oyster sauce, and a pinch of white pepper; mix well, then add 1 tablespoon of cornstarch and mix well again; add a suitable amount of shredded ginger and mix well. Add a suitable amount of vegetable oil to seal in moisture. Marinate for 30 minutes.

Marinate the beef for 30 minutes. Heat a pan with plenty of oil. When the oil is about 70% hot, add the beef.

Stir-fry over high heat for 2 minutes, until the beef changes color. Remove and set aside.

Heat a pan with a little oil over low heat. Add the green beans and stir-fry until they change color. Then add the wood ear mushrooms, yam, and carrots, and continue to stir-fry over high heat for 2 minutes.

Add 1 tablespoon (1.5 grams) of salt and 1 tablespoon (10 grams) of light soy sauce, and stir-fry evenly. Add the stir-fried beef and stir-fry for 1 minute.

Add one spoonful of cornstarch to three spoonfuls of water. Pour the cornstarch slurry along the edge of the pan to thicken the sauce. Stir-fry for two minutes, until the moisture evaporates. Finally, sprinkle with a little MSG for added flavor. Serve.
