Steps for making stir-fried shrimp

Onions, scallions, green bell peppers, and some small red chilies, as shown in the picture, are washed, diced, and cut into sections.

Finely chop 5 small red chilies, 5 cloves of garlic, and about 2 small pieces of ginger (about the size of your thumb).

Devein the shrimp by cutting along the back, removing the heads, and draining them. Then, fry them in hot oil over high heat until fragrant, and quickly remove them from the oil.

Leave some of the oil from frying the shrimp in the pan, add minced ginger and garlic, and sauté over low heat until the garlic turns golden brown.

Pour in the pre-fried shrimp and stir-fry evenly.

To start seasoning, add fermented glutinous rice (or cooking wine + sugar), a spoonful of oyster sauce, a spoonful of soy sauce, and a pinch of salt.

Add the side dishes and stir-fry over high heat until just cooked. Taste and adjust the seasoning to your liking. Once satisfied, remove from heat.
Tips for stir-frying shrimp
If the fermented glutinous rice is already sweet, then you don't need to add sugar. Fresh shrimp is best for a firm and springy texture.
