How to make Q-bouncy and translucent "pork skin jelly"

My mother bought two pounds of pork skin strips and said she didn't know how to cook them. Well, that's hard to say, let's make pork skin jelly! I sincerely advise everyone to never buy these processed pork skin strips! They said they were very clean, but when I washed them, I saw that many strips still had thick layers of grease on them. I manually tore off the ones I could, and for the ones that couldn't be torn off, I'll have to deal with them later. See below for details 👀👀👀 Wash the pork skin strips.

Prepare two portions of scallion segments and ginger slices. Put the washed pork skin strips into a pot, add water, scallion segments, ginger slices, and a spoonful of cooking wine.

After bringing the water to a boil, continue cooking for 30 seconds. Remove the aromatics and place them in a bowl. Add a spoonful of salt and baking soda, and rub and knead vigorously for 5 minutes.
