During the National Day holiday, there were all sorts of gatherings and meals. A bowl of "stir-fried noodles" is needed to ease the stomach's burden. The recipe comes from my dad. The vegetables are usually spinach, lettuce, cabbage, or other leafy greens. Today I used yellow heart cabbage (also called: bok choy). Don't be deterred by the many "amounts" in the ingredients list. Because everyone has different tastes, many ingredients will be adjusted according to personal preference. It's best to add less at first to avoid mistakes. After cooking, add a little aged vinegar for seasoning; the taste will be even better!

After washing the yellow cabbage, cut it into thin strips.

Blanch them briefly in boiling water; this will make them softer. I personally prefer that both the vegetables and noodles in stir-fried noodles are a little softer.

1. Peel and chop the tomatoes; 2. Mince the garlic; That concludes the vegetable preparation.

Mince the beef, add light soy sauce, vegetable oil and cornstarch, mix well and marinate for 10 minutes.

Stir-fry minced beef in a hot pan with cold oil until fragrant.

Stir-fry with vegetables

Add boiling water, and when the soup is boiling vigorously, add the noodles to the pot.

Add a little salt and sesame oil, and cook until the noodles are soft and can be easily broken with chopsticks. No additional water is needed during the process. However, if you feel there's too little broth, you can add some warm water.
