The small potatoes were freshly dug from the field. After peeling, they were washed several times with clean water and drained. Then, oil was heated in a pan, and the potatoes were stir-fried for a few minutes until slightly golden brown. A spoonful of salt was added, and the potatoes were continued to stir-fry.

After stir-frying with light soy sauce, oyster sauce, and dark soy sauce, add a large bowl of water and cook until the water evaporates. Then add another large bowl of water and a little sugar. Continue stir-frying until the mixture is well-colored and the sauce is almost reduced. Then it's ready to serve.

It's soft and chewy, and tastes just like the food I remember from my childhood.
