Steps for making sweet and sour pork ribs

Rinse the pork ribs with clean water, put them in a pot of cold water with scallions, ginger, and cooking wine, skim off the surface foam, and blanch for about five minutes after the water boils. Remove and drain.

Heat a little oil in a pan, add ginger slices and sauté until fragrant. Then add the pork ribs and sauté until they turn a light brown color.

Yes, add light soy sauce for color. The pan is quite hot, so pour a ring of cooking wine around the edge of the pan to remove any fishy smell.

Then add enough warm water to cover the meat (about the width of a little finger joint), along with scallions, star anise, cinnamon, dried hawthorn, and rock sugar to taste. Simmer over low heat for 45 minutes. When removing from heat, discard the spices, add a little salt and vinegar, and reduce the sauce over high heat until thickened.

Remove from the pan, plate, sprinkle with white sesame seeds, and enjoy!
