Steps for making braised eggplant with minced meat

Add soy sauce, cornstarch, and salt to the minced meat and mix well.

Peel and slice the eggplant.

Wash and cut the chili sauce into pieces and set aside.

Wash a small amount of cilantro and set aside.

Pour peanut oil into the pot

Heat the oil to medium heat and stir-fry the washed and sliced eggplant.

Continue frying the eggplant until it is completely cooked through and all the water has been extracted.

The eggplant, which has already been stir-fried in oil, is placed on a plate and set aside.

Use the remaining oil from stir-frying the eggplant to sauté star anise, scallions, and ginger.

Pour the minced meat into the pan and stir-fry until cooked.

Pour the already stir-fried eggplant into the pan, add an appropriate amount of sweet bean sauce, and stir-fry.

Add the chili peppers to the pan and continue stir-frying. Add a small amount of salt and chicken bouillon powder. Before serving, add a little cilantro.
