Steps for making braised sea bass

Clean the sea bass thoroughly, drain the water, and then marinate it briefly with scallions and ginger.

Prepare ingredients

Remove the scallions and ginger from the marinated fish and pat it dry.

Heat the pan, pour in plenty of oil, and sprinkle in a little salt to prevent sticking.

Fry each strip until golden brown on both sides.

After one side has set, flip it over and fry the other side.

Golden and simmered

I made three.

Heat the remaining oil in the pan, add minced ginger, garlic, and chopped chili peppers, and stir-fry until fragrant.

Turn the heat to medium-low and add the dried black beans.

Add soybean paste

Add coarse chili powder and stir-fry until fragrant.

Add water

Bring to a boil briefly

Add dark soy sauce

Add the fried fish

Add a little cooking wine (I didn't have any, so I used white wine instead). If it's too bland, add some salt. I prefer it bland, so I didn't add any.

Add white sugar

Let the fish simmer for a while, leaving a little broth; it's delicious with rice porridge.

Sprinkle with chopped green onions

Remove from heat and plate
