
I always thought Typhoon Shelter-Style Fried Shrimp was incredibly difficult, but it's actually really simple! The steps are super easy; the most troublesome step is actually preparing the shrimp! As a lazy food blogger, I don't aim for restaurant-quality cooking, I just want it to be simple and delicious 🤣

Steps for making Typhoon Shelter Style Fried Shrimp (Easy Version)

Use kitchen shears to cut off the shrimp's rostrum, head, whiskers, and legs.

After preprocessing, it should look like the image above.

Cut open the back of the shrimp, remove the vein, wash it clean, and set aside.

Sprinkle with a suitable amount of salt and marinate for about 10 minutes.

Heat oil in a pan until it reaches about 140°C (50% hot). When you put chopsticks in, tiny bubbles will appear.

Add the prepared prawns and fry until they change color, then remove them from the oil.

Remove the residue from the oil, remove the foam on the surface, and heat it to about 180°C (about 70% hot), when the oil is smoking.

Deep-fry the prawns for about 30 seconds, then remove and set aside.

Leave a small amount of oil in the pan, add minced garlic, and stir-fry until fragrant and slightly yellow.

Add the white breadcrumbs and stir-fry over medium-low heat.

Stir-fry until it turns yellowish and becomes loose.

Add the fried prawns and stir-fry briefly.

Season with sugar and white pepper. *The shrimp is already salty, and I usually eat very bland food, so I didn't add any salt at this step. If you prefer a stronger flavor, you can add some salt.

Stir-fry evenly and it's ready to serve!
Tips for Typhoon Shelter Fried Shrimp (Simplified Version)
1️⃣Since the shrimp I bought is already seasoned, salt is only needed for a base flavor, so you don't need to add much. 2️⃣Use more oil when frying the shrimp (I personally think shrimp oil fried rice is incredibly fragrant)! 3️⃣Since there's a lot of shrimp, fry them in three or four batches, don't put them all in at once! 4️⃣Garlic:Breadcrumbs = 1:1 5️⃣Don't use too much oil when frying the garlic and breadcrumbs, otherwise the breadcrumbs will clump together and won't break up.
