Heat oil in a wok, then add ginger and garlic and sauté until fragrant. Add the drained goose meat and stir-fry until the moisture evaporates, adding a little water as needed. Transfer to a clay pot, bring to a boil over high heat, add celery and garlic sprouts on top, cover, and simmer for about 2 minutes. Turn off the heat and leave the lid slightly ajar.
