This is unsoaked white fungus. Take an appropriate amount of white fungus and soak it in cold or warm water (not exceeding 30โ) for 2-3 hours. Remember not to use hot water to soak it, as hot water will make the white fungus soft and lose its unique crispness. After soaking, tear it into small pieces by hand and remove the hard, yellow root at the bottom. Blanch the cleaned white fungus in boiling water for 1-2 minutes. After removing it, you can rinse it with cold boiled water, which will make the texture even crisper.

Cut the lean and fatty pork into separate chunks. Mince the scallions, slice the chili peppers into small rings, and crush and mince the garlic. Heat a pan over low heat and sautรฉ the fatty pork until fragrant (adding a little rapeseed oil will enhance the aroma). Add the lean pork and stir-fry quickly over medium heat. Add the minced garlic and continue stir-frying. Add the white fungus, salt, and light soy sauce, stir-fry evenly, then reduce the heat to low.
