Steps for making hot and sour shredded potatoes

Shred/grate the potatoes and set aside.

Rinse off excess starch in clean water.

Add shredded potatoes to boiling water, then add vinegar (the acidic substances in vinegar can react with the starch in potatoes, making the shredded potatoes crisper).

Heat oil in a wok, add dried chili pepper pieces, chopped green onions, and minced garlic, and stir-fry until fragrant.

Drizzle a spoonful of balsamic vinegar and a spoonful of light soy sauce along the edge of the wok to release their aroma (this is the key to delicious shredded potatoes).


Season with salt, chicken bouillon, and sugar to enhance flavor.

Add shredded green bell peppers.

Stir-fry over high heat until evenly mixed, then remove from heat. ✅
