Prepare some of your favorite side dishes.

Prepare some small red chilies, minced garlic, pickled peppers, shredded ginger, and cilantro.

Add some salt, shredded ginger, and cooking oil to the fish fillets and mix well.

If you're worried about the pickled cabbage being too sour, soak it for half an hour before cutting it into sections.

Heat the pan and add the pickled cabbage. Don't add oil yet; stir-fry the pickled cabbage until the moisture evaporates.

Add cooking oil, garlic cloves, chopped chili peppers, shredded ginger, and pickled peppers, and stir-fry until fragrant.

Add water, salt, light soy sauce, white vinegar, oyster sauce, sugar, and pickled pepper brine.

Bring to a boil over high heat, simmer for 3 minutes to develop the flavor.

Add all the side dishes back in and simmer for another 30 seconds or so.

Add the fish slices.

Prepare to pour hot oil; the small pot contains cooking oil, dried chili peppers, and Sichuan peppercorns.

Sauté until fragrant, then pour in.

Sprinkle with cilantro and it's ready to serve.
