Easy and simple recipe for sweet and sour pork ribs

Try to buy spare ribs; they're easier to eat that way, haha. First, rub the ribs with scallions and ginger, then add water and marinate for half an hour to better remove the fishy smell.

Then drain the water, add fresh water, and blanch the ribs. Make sure to cook the ribs until all the scum rises to the surface to remove any fishy smell.

Next, heat oil in a wok. Once hot, add garlic and, if desired, some Sichuan peppercorns. Then, add the ribs and stir-fry until they change color. Pour in the prepared sauce (one tablespoon of cooking wine, one tablespoon of dark soy sauce, two tablespoons of light soy sauce, three tablespoons of sugar, and four tablespoons of balsamic vinegar or white vinegar). Add water to cover the ribs and simmer over medium-low heat for about half an hour.

Check the water every 20 minutes to make sure it doesn't boil dry. When the sauce is almost reduced, turn the heat down to low. Before removing from the heat, drizzle with a spoonful of balsamic vinegar and sprinkle with sesame seeds. Your fragrant ribs are ready!
