Steps for making braised pork intestines

Step 1: Braising the Pork Intestines. This step will use all the spices and seasonings. First, a group photo of the spices.

Place all spices except ginger slices into a filter bag, put it in a stew pot, add about half a pot of water, bring to a boil, and set aside.

Heat oil in a pan, add ginger slices, and sauté over low heat. After about four or five minutes, when the ginger slices are quite browned and the oil is hot, the oil will be ready to serve.

Turn the heat to high, add the cleaned, drained, and chopped pork intestines, and stir-fry. When they start to release water, pour in some white wine around the edge of the wok to remove any unpleasant odor, and continue stir-frying.

Then add fermented soybean paste, rock sugar, and soy sauce, and stir-fry.

Keep stir-frying over high heat. As you stir-fry, more and more water will accumulate, and then it will gradually evaporate.

Stir-fry for about ten minutes, until all the moisture has evaporated and the oil becomes clear. By the way, this step is crucial for braised meat; you must stir-fry until all the moisture has evaporated before adding water, so that the meat will be firm.

Pour the stir-fried pork intestines into the pot of boiling water you prepared earlier, and bring to a boil. Once boiling, immediately turn off the heat, cover the pot, and let it simmer for one hour. Bring it to a boil again, then immediately turn off the heat again and let it simmer for another hour.

Simmer over medium heat for a few minutes

Cook the tofu until done and the broth has reduced slightly. Add salt, Sichuan peppercorn powder, chili powder, minced garlic, and MSG to taste, and stir-fry until well combined.

After taking it out of the pot and putting it in a bowl, it's not over yet; it still needs a little "beauty treatment."

Sprinkle with chopped scallions, then drizzle a spoonful of chili oil over the bottom of that huge pot of braised pork intestines. Perfect!
