Note that dark soy sauce is used for coloring. If using two tablespoons of light soy sauce, use one tablespoon of dark soy sauce. Don't add too much, otherwise the ribs will turn black.

Step 6: After stewing the ribs for 40 minutes, add a small amount of white sugar to enhance the flavor, then turn up the heat to reduce the sauce.
