Clean the duck, including its head and feet.

Prepare the rice wine, soy sauce, ginger slices, scallions, and sugar slices; put the oil directly into the pot.

First, give the duck a "massage" with dark soy sauce.

Apply evenly.

Heat oil in a wok and put the duck in

Fry until golden brown on all sides

Fried until done

Pour in the shallots and ginger and they will burst into aroma.

Then add rice wine, light soy sauce, and sugar slices.

Add an appropriate amount of water

Bring to a boil over high heat, then reduce to medium-low heat and simmer until the sauce thickens.

During the process, open the lid and turn the duck over to ensure even coloring.

After reducing the sauce, I added some pepper, purely out of personal preference.
