I haven't been eating garlic lately, but adding a little minced garlic makes it even more fragrant. First, render the fat from the pork belly; then use this lard to stir-fry the green beans—it tastes even better and isn't greasy.
Materials
Stir-fried minced meat and green beans - a simple and delicious home-style dish.

1. Select a piece of pork shoulder (front leg meat). Mince the lean and fatty parts separately. Marinate the lean meat with light soy sauce, salt, cornstarch, MSG, chopped green onions, and peanut oil. 2. Wash the green beans thoroughly under running water. Soak them in a solution of baking soda for 20 minutes to remove pesticide residue. Rinse them thoroughly under running water and drain. Cut them diagonally into small pieces. 3. Slice a few pieces of ginger; larger pieces are easier to remove.

Heat a large iron wok over medium-low heat. Add a little oil, then add the fatty pork and render the fat until it turns golden brown. Add ginger to remove any gamey smell. Then add the minced lean pork and stir-fry until it changes color.

Add water just enough to cover the green beans, and simmer for 3 minutes. The water will reduce.

Continue stir-frying for 3 minutes, until all the moisture has evaporated and the aroma is irresistible. Remove the ginger and plate it.

Super delicious with rice, one bite of green beans and one bite of rice 😋
