Prepare the main ingredients: 400g bamboo shoots, 10g chopped scallions, 5g each of chopped ginger and garlic, and 5g chopped green onions.

Cut bamboo shoots into long strips or chunks, add 2 grams of water to boiling water to remove bitterness, then remove and drain.

Heat some oil in a wok, then sauté the scallions and garlic until fragrant.

Add 30g of reduced-sodium original-flavor fermented bean paste and stir-fry over low heat until fragrant. Add the bamboo shoots and stir-fry evenly. Add 150ml of water, 5g of white sugar, 6ml of [rock sugar dark soy sauce], 10ml of [gold label light soy sauce], and 5ml of [rice vinegar].

Cover and simmer over low heat for 5 minutes, until the sauce thickens.

Drizzle with 5 ml of sesame oil for shine, then plate and garnish with chopped scallions.
