Cut the potatoes into strips, not too thick, soak them in water for about 15 minutes, then drain and let them cool slightly.

Chop the celery into sections and set aside.

Prepare chopped green onions and shredded ginger.

Heat oil in a wok, sauté chopped scallions and ginger, then stir-fry celery.

Add the fried potato strips, a little light soy sauce, a sprinkle of chili powder, cumin, and salt, according to personal taste. Stir-fry and it's ready to serve! (If you prefer crispy potatoes, you can dry-fry the celery with the normal seasonings, then put the celery in a bowl and mix it with the fried potato strips.)
