
Today I'm stir-frying a simple home-style dish with chives, water bamboo shoots, dried tofu, and meat. You can also add pickled mustard greens. It's up to personal preference.

Steps for making stir-fried leek sprouts

Cut the chives into sections, the water bamboo shoots into shreds, and the dried tofu into thin slices. I used pork belly, which I also sliced thinly.

Pour a little oil into the pot, add the pork belly slices, and stir-fry for a while until the oil is rendered.

Add shredded water bamboo shoots and dried tofu and stir-fry.

Add the chives and stir-fry for a while.

Add a little cooking wine and light soy sauce, then add an appropriate amount of water and simmer for a while.

Add a little salt halfway through.

It's done cooking! The aroma is wonderful. It goes perfectly with rice.
Tips for stir-frying chives
You can also use lean meat. It's best to marinate lean meat with cooking wine, light soy sauce, and cornstarch, which will make the meat more tender when stir-fried. If it's meat with fat, you don't need to marinate it; you can render the fat out.
