Step 1

Remove the heads from the shrimp, wash them, blanch them in boiling water for 5 minutes, then remove and set aside.

Prepare the ingredients: slice ginger into strips, smash garlic cloves (don't discard the garlic skins), and cut dried chili peppers into sections.

Prepare a bowl by mixing half a bowl of soy sauce, some oyster sauce, a spoonful of white sugar, and some sesame oil.
Step 4

Heat oil in a wok, then add ginger slices, garlic, and dried chili peppers and sautรฉ until fragrant.

Then add the blanched shrimp and stir-fry.

Add the sauce back in and continue stir-frying over high heat the whole time.

Turn off the heat once the sauce has reduced.
