
Today I'm sharing a traditional Henan dish: [Sour Soup Crispy Pork]. The pork is tender and flavorful, and the sour soup is rich and aromatic—absolutely delicious with rice or noodles! The recipe is so detailed that even kitchen novices can easily recreate it.

Prepare the main ingredients: 400g pork shoulder, soaked wood ear mushrooms and daylily buds in advance, chopped garlic chives and cilantro, peeled and diced tomatoes, ginger and garlic (cut into pieces), and 80g sweet potato starch.

Cut the pork shoulder into strips about the thickness of your little finger. Add 3 grams of salt, 1 gram each of white pepper powder and Sichuan peppercorn powder, 1 gram of thirteen-spice powder, 5 grams each of ginger and scallions. Mix well and marinate for 15 minutes.

Add water to the sweet potato starch in small amounts several times, stirring until a thick, lump-free paste is formed.

Pour into the meat and mix well to coat.

Heat cooking oil in a wok to 60% of its maximum temperature. Fry the meat, first using medium heat to set its shape, then reducing to medium-low heat to fry until cooked through, and finally turning to high heat to fry until crispy and fragrant.

Remove and drain the oil for later use.

Heat a small amount of oil in a pan and sauté scallions and ginger until fragrant.

Sauté the tomatoes until they soften and release their juices.

Add 1000 ml of water, then add the wood ear mushrooms and daylily buds and cook for 3 minutes.

Add the crispy pork and simmer for 5 minutes. Add 4 grams of salt, 2 grams of white pepper powder, and vinegar to taste. Add garlic chives and cilantro before serving.

The sour soup crispy pork is ready.

Notes: 1. Use sweet potato starch for frying crispy pork. This will make the pork more chewy, resistant to boiling and stewing, and less likely to fall off the coating. 2. Adjust the amount of white pepper powder according to your taste. Add more if you like it spicy, and less if you prefer it milder. 3. Use pork shoulder or pork shoulder for frying crispy pork. This will result in tender, delicious meat with a rich texture and not dry.
