A friend brought me some free-range chicken from the countryside, so I decided to stir-fry it! Fresh chicken doesn't need to be blanched; you can stir-fry it directly.

Sauté the chicken until the fat is rendered, without adding any oil throughout the process.

When stir-frying chicken, do not stir excessively. Wait until it sets before flipping it over, otherwise chicken oil will be released! Prepare the side dishes in advance as shown in the picture: sliced potatoes and pork, sliced green peppers and pork, onions, garlic, and scallions!

Render the chicken fat, then add scallions, garlic, and other ingredients.

Stir-fry over medium-low heat throughout the entire process.

I added a packet of stir-fry seasoning, just to save time! You can also make your own, it's basically just soy sauce, oyster sauce, sugar, salt, etc.!

Bring to a boil over medium-high heat. My chicken is quite resistant to stewing, and the large iron pot heats up very quickly, so I added some water later.

Simmer for about 30 minutes, then reduce the sauce over high heat. Add the green bell pepper pieces 3 minutes before the end of the simmering process (I forgot to take a picture because my friends came to entertain them!). Add salt to taste.

Weekends are unbearably hot in the kitchen, so it's a good time to relax! When adding water, be sure to add plenty, or hot water is best! If the potatoes are prone to becoming mushy, add them in the last 10-15 minutes. This depends on personal preference! A large iron pot is great for stewing dishes.
