Add a suitable amount of cooking oil to a clay pot, then add ginger slices and sauté until fragrant. ⚠️This soup is best made in a clay pot.

Add the chicken and stir-fry over high heat until the chicken changes color. ⚠️No need to blanch the chicken.

After the chicken changes color, add three tablespoons of Shaoxing wine and stir-fry until the aroma of the wine is released.

Pour in an appropriate amount of Shaoxing wine and boiling water (freshly boiled water).

Bring to a boil over high heat, cook for 10 minutes, then reduce to medium-low heat and cook for 20 minutes.
