First, prepare the ingredients: Soak the wood ear mushrooms, clean them thoroughly, and tear them into small pieces; beat 4 eggs; cut the garlic scapes into sections; mince the garlic and chili peppers and set aside.

Pour an appropriate amount of oil into a pan. Once the oil is hot, pour in the beaten egg mixture and stir-fry until the eggs are set. Remove from the pan and set aside.
