How to make stir-fried eel with chives, a common dish in northern Jiangsu

I bought the eel shreds directly from Dingdong (a food delivery app). If you want fresh eel, you can go to the market and have them cleaned and shredded.

Wash and chop the chives

Add a little ginger, garlic, and red chili to the oil.

Add the eel shreds, stir-fry briefly, then add a suitable amount of cooking wine.

Add one tablespoon of light soy sauce, half a tablespoon of oyster sauce, a pinch of dark soy sauce for color, and some water. Simmer for a while until the eel shreds are cooked through.

Add the chives and stir-fry evenly. Add a little salt, a pinch of chicken bouillon, and finally a touch of sugar – this is the key to enhancing the flavor.
