
There's a saying, "If you come to Qingdao and don't drink Qingdao-style beer or eat seafood, you can't say you've been to Qingdao..." The scallions in the octopus are especially fragrant when tossed with spring scallions... Since we didn't have any, we used regular scallions instead.

The famous Qingdao dish, "Scallion-Braised Octopus," is both a hotel signature dish and a common home-style dish... Here are the steps to make it.
Step 1

Remove the octopus's internal organs, gently rub it with a little flour to remove dirt from the suction cups, then rinse it clean. Place it in a pot of cold water, bring it to a boil, and cook for two minutes (depending on its size). Remove it and rinse it with cold water.
Step 2

Slice the white part of the scallion into thin strips and soak it in ice water for a while to remove its pungent taste and make it crisper.
Step 3

The octagon is cut into bite-sized pieces.
Step 4

Add seafood soy sauce, rice vinegar, salt, MSG, and sesame oil. Mix well.
