
This simple, low-fat home-style dish is so good, I wouldn't trade it for meat! The winter melon with dried shrimp is even more delicious.

Remove the seeds and peel from the winter melon.

Cut into slightly thicker pieces

Prepare some chopped green onions, dried shrimp, white scallions, and minced garlic.

Heat oil in a wok, add dried shrimp, white parts of scallions, and minced garlic, and stir-fry briefly until fragrant.

Add the winter melon and continue stir-frying until it changes color.

Add half a teaspoon of salt, half a teaspoon of sugar, one tablespoon of light soy sauce, and one tablespoon of oyster sauce for seasoning. ⚠️If you don't like the sourness of winter melon, you can omit the light soy sauce.

Once the sauce has developed a fragrant aroma, add an appropriate amount of water.

After boiling, simmer over low heat for 15 minutes.

Sprinkle with chopped green onions and it's ready to serve!
