Crack the eggs and beat them well. Soak the dried bean curd sticks in cold water overnight. After the water has submerged the bean curd sticks, place a bowl on top to weigh them down. Cut the yellow bell peppers and scallion leaves diagonally into long sections.

Heat a wok and pour in rapeseed oil. Heat over low heat until it reaches 50% of its maximum temperature. Add the beaten egg mixture and stir-fry until slightly browned and broken up.

Pour in boiling water, add dried bean curd sticks and yellow chili peppers, turn to medium heat, cover and simmer for 3 minutes.
