Steps for making egg-wrapped tofu

Make several cuts in the tofu, both horizontally and vertically, and pour it into a bowl for later use.

Crack the eggs into a bowl (you can use 3 eggs).

Beat the eggs with a pinch of salt and pour them into the tofu.

Stir it gently, being careful not to break the tofu.

Put salt, sugar, and MSG in a bowl.

Pour a little soy sauce

Add water

Heat a little more oil in the pan.

Pour in the egg tofu

Stir-fry until set, do not overcook.

Set aside. (There was a bit too much oil this time 😂)

Leave some oil in the pan, add the fermented bean paste and stir-fry briefly.

Add minced garlic and stir-fry until fragrant.

Pour in the egg tofu and gently push it a few times with a spatula.

Pour in the sauce

Push it a few more times, then simmer for a little while longer.

Sprinkle with chopped green onions before serving.
