I have frozen pork ribs here, so I recommend blanching them first! Add a spoonful of cooking wine or Shaoxing wine when blanching to remove the fishy smell of the ribs. If you are using fresh pork ribs, soak them in clean water for 1 hour beforehand to remove the blood. In this case, you don't need to blanch them. You can add some salt and a little minced ginger to marinate them for 10 minutes.

After blanching the pork ribs, drain them and place them in a bowl for later use.

Slice the cured pork into thin slices, blanch it briefly, and then drain.

Heat oil in a wok, add the cured pork and stir-fry until some of the fat is rendered.

Add a spoonful of dried chili powder and stir-fry until fragrant and the oil turns red.
